All I know is you need to run the transaction /nCRMD_SERV_SLA to check if nothing is changed especially Calendar.
Then Check SLA determination procedure

Settings for Service Requests
Define SLA Determination Procedures
At last, make sure BADI CRM_SRV_SLA_CALCTIME has correct implementation.
As far as I know you do not need to maintain the service profile for org unit.
